Most chapters doing spring recruitment (which I assume is what you are interested in) will start having events the first or second week of the new semester. Some of them will advertise, so watch the Panhellenic website linked above, ads in the DI, and even the sidewalk chalk on the quad.
However, some chapters won't advertise at all, so I recommend two things:
1) If you have friends who are in sororities, NOW is the time to let them know you might be interested. Try not to be creepy about it, but you can let them know you are considering Greek Life.
2) E-mail the Panhellenic VP listed on the website and tell her you are interested as well, and ask if she can forward your name along to the chapters that may be recruiting in the spring.
Basically, you want the chapters who aren't advertising to think "oh, we should invite this person over and see if she'd be a good fit".
