Properly speaking,the crest is the portion of the coat-of-arms above the shield and the helmet/or crown (if there is one or both) and the torse or wreath (the thing that looks sort of like two pieces of cloth twisted together). It is derived from the identifying mark that knights would wear on their helmets. Delta Tau Delta's crest is the all-seeing eye. Likewise, for example, are the crests of some GLO's that you asked about

Lambda Chi Alpha: the cross and crescent (the crown properly goes with the helmet, not the crest)
Sigma Nu: the fraternity badge
Sigma Pi: the equilateral triangle with stars
Tau Kappa Epsilon: a skull
Theta Chi: an eagle
Alpha Phi: an ivy leaf
Alpha Xi Delta: a rose
Pi Beta Phi: No crest (Pi Phi follows heraldic tradition in this regard; because women did not wear helmets, their coats-of-arms traditionally did not have crests)
BTW, the Zeta crest would be the five-link chain. (And the Phi Mu Alpha crest is a lyre or harp.
