That's part of the fun of a chapter being able to choose their chapter name and submotto, it helps solidify the individuality of the chapter. I believe there are even a few chapters who honor someone and have the sub-motto match those letters. I think there was even a recently chartered chapter whose sub-motto is in Greek like early the early chapters - can't remember which one or I could even be imagining that one. . . .

You're thinking of St. Louis University. They use a Greek sub-motto. I'll have to search for the exact sub-motto. It's on GC, though.
The Tennessee Omicron tradition began with Vanderbilt who named their chapter Nu Omicron to honor Omicron chapter at UT-Knoxville for their help with extension, like Southern Methodist did with Kappa chapter.
