Another recommendation is add education bits in small pieces. For example, during each meeting report on an interesting topic like those above- it could be 5 tips for resume writing, or 10 moments in your Fraternity's history. That way you don't have to have a lot of extra educational programs that people may or may not show up to. A blend of longer programs with short reports during the meeting is good, I think.
You could also work to get other officers involved. For example, the Ritualist could give some ritual tidbits or practice a song, as long as no new members/guests are present. Or perhaps if you don't have a specific Education chairman, the "tidbit role" could alternate between officers each week so that you get a different educational flair from each.
