Tofurkey Italian sausages.

They taste so good that my mother thinks they are secretly NOT vegetarian and use meat casings (they don't, I looked it up). If you didn't tell them no one would believe they are not meat. SO good!

How do you make yours? I tried various kinds of ways and they wind up rather tough to chew.
