You know, I was dead set against this tradition as I am not a fan of eating anything past 72 hours old. But my husband wanted to do it, so the top layer is in my freezer. We shall see next April!
Tip-I heard of someone defrosting the top layer, chunking it up and making it into ice cream. Of course you need an ice cream maker but it sounded like a really neat way to enjoy it. They had a red velvet wedding cake but I think any type could do. Cake and ice cream is a killer combination!

Apple has this great thing where you take your photos, arrange them any way you like, you can add text, and they bind it into a hardbound book. Since the traditional gift is "paper' this falls into that category and is a cute keepsake, but doesn't require all the work of scrapbooking. You could do it all kinds of different ways, maybe pictures of your first year together, or go back to when you were kids, when you first met, include your wedding and honeymoon, and so on.

It depends on your software and such, but a friend recently got one for archival purposes and it it of an amazing quality.
