I'm not a dietitian but I do PR for a company that employs dietitians in our marketing department. I too have been thinking about going back to school to supplement my comm degree with nutrition classes, so I know what they're talking about.
The only think I've heard from my coworkers is that it's hard to find good jobs. Most of them worked in hospitals or nursing homes before happening upon our company. However, you may be able to find a job with a commodity promotional organization where you could use your communication skills, too.
