The LSUHSC school of public health held most, if not all, of its classes online shortly after Katrina. I have a friend who is studying public health, and he told me that it was strange to have classes online after the in-person lectures. Still, it was a way to have some human interaction going and to have classes continue after the world around us fell apart. It was interesting to listen to an epidemiology lecture while sipping on my morning coffee! The prof was in Boston, there were several students in China, I think there was a guy in California...we were all scattered after The Storm.

As for stats online, go for it! You seem to have a basic understanding of the concepts and math involved. If you know some basic algebra, you should be able to grasp basic statistical concepts. You'll probably spend your semester discussing mean, standard deviation, standard normal distribution, and possibly the chi-squared distribution.

Good luck! Let me know if you need any help; I may be able to explain some basic stats. If not, I can consult with my aforementioned friend, who has a Ph. D. in the subject.
