It depends on how much you want to pay.  If you can do a good job yourself, I would.  Your time is free; theirs will be very expensive.
For future reference, just hire a photographer who does this stuff.  Unless you have VERY few guys, this is probably going to cost more than having it done all at once.  Die-cutting mats is ridic expensive, and if you're talking 30 guys, that's 30 separate holes they have to cut.
If you don't want to pay the big companies, see a local photographer.  He/she will also be able to do this and hopefully give you a deal.  But use a professional, not a guy who fancies himself a photographer.
