We did a camp-a-thon. Another chapter did a rock-a-thon, and yet another chapter did a swing-a-thon.
You could also see if there are any PartyLite, PamperedChef, Mary Kay, etc. consultants in the area who would be willing to help you with a fundraiser.
Completely free fundraiser, where you get all the $$...vacuum-a-thon. Dorms have vacuums, you borrow them. Go around to rooms, and offer to vacuum for $1. We made more than $1000 doing it, and it was all for our philanthropy with no overhead.
