I'm not sure if this is the way it is on every campus, but on our campus, "Greek Night" is Monday nights.
Basically, that just means that the houses that do formal meals plan to do them on that particular night each week. Usually any meetings or announcements that need to take place are taken care of that night, because those involved in Greek organizations clear their schedules for the entire night. On our campus, every house does their meetings on Monday nights around the same times. It makes it easy to plan activities because you KNOW you can call over to another house and find a social chair or someone who knows what's going on and you KNOW they will be available to talk to.
Again, I'm not sure if it's this way on all campuses, this is just what "Greek Night" is on our campus.

at my school, all the sororities have their chapter meetings on monday nights, but i'm not sure what the fraternities do. i think we do this to make it easier to schedule non-sorority activities, since every girl in a sorority, no matter which house, has to make chapter her first priority on monday nights. so, since my school is very heavily greek, other campus groups might try not to schedule meetings at the same time.

Most fraternities at my college have their meetings on sunday nights, but I've never heard the term "greek night" before. It may be something specific to the university you're going to possibly.

At UBC Greek Night is Wednesday Night. It kicks off about 4:30pm with a Greek Beer Garden hosted by a different fraternity every week. Then (as a sorority) we usually head of for dinner somewhere (sushi, McD's - depending on our moods). Everyoen has meetings around 7, then at 9-9:30 it's of to exchanges (if you have one booked). After that most Greeks head of to one of Vancouver's many rockin' night clubs, or to the Campus Pub
