Because of my sense of humor, they get defensive and think I'm saying something about them before they even hear what I have to say.
And for other reasons I can't figure out, all my good friends say that they hated me when they first met me, b/c I was "intimidating/snobby/stuck up." Also hurts, b/c I'm usually EXTREMELY intimidated by people, especially girls.

This sounds VERY much like me.
I'm shy but I have a sharp tongue. I can be pretty sarcastic. And I've had so many ppl tell me they thought I was a snob until t hey got to know me.
ETA:
My parents pay for school, rent, etc BUT I also feel the need to work so that I can reduce whatever they're paying. It's a lot. SO people ASSume I'm rich. It's not that I'm richer than anyone, it's just my family's priorities are somewhat different because of our culture.
In addition, I guess I'm somewhat prissy so people seem to think I'm an airhead. Ummm - how about NOT - I have a degree in computer science and I'm getting my Master's now thank you. Because I like to shop and talk about clothes does not mean that's all there is. I do happen to do fashion design so CLEARLY you will hear about clothes. I refuse to apologise for being a girly girl. In the same vein, I won't hesitate to put furniture together, paint a house etc. I just don't care for sports. SO SUE ME!!!!!
This part is a good thing somewhat. I'm young so when people find out, they tend to respect me more because I'm already in grad school. Funny thing is I know a lot of people like me (it's because of where we were raised). Bad part - people think I must be dork if I'm my age and have a degree in Computer Science. That is until they meet me.
When they do meet me, they're shocked that I had any interest in CS.
