I just met someone from Freeport yesterday. They have a big pretzel factory in town, that is why they are the pretzels.
I always found it funny that a Catholic based school like DePaul here in Chicago would have the mascot the Blue "Demons."
Come to find out from a friend of mine that went there said when they first started their basketball team their uniforms had a big "D" on the front for DePaul. The the student body nicknamed them the Blue D-Men and from there it just tranfered into "Blue Demons."

My high school was
The Perry Commodores. We used the anchor as a symbol, and I remember that the mascot was this horrendous sailor/captain (commodore) guy.
At Otterbein, we are the Cardinals. BUT! In yet another quirk of OC, we have 2 mascots. The athletic mascot is the Cardinal, the academic mascot is the Otter.

The Evergreen State College Geoducks. (GOO-ee-ducks)
They're giant mollusks that are rather um, interesting looking. Here's their info page: What is a Geoduck?

I've always been a fan of the mascots for Western Illinois - the men are the Leathernecks, and the women are the Westerwinds.

Ladies and gentlemen, we have a winner.
I think this even trumps banana slug (by a slim margin!).

Arkansas State University has held onto the Indians for its mascot (we get local tribal approval on matters). At one time the female teams were called the Tomahawks. The women's basketball teams' shirts said "Tommies". They changed to the Lady Indians sometime in the '80's.
My favorite high school mascots:
Hickman High School Kewpies, Columbia, Missouri
Dardanell High School Sand Lizards, Dardanelle, Arkansas
Lake City High School Catfish, Lake City, Arkansas
and, I promise, we played some high school in Illinois that had The Midgets as their mascot.

The Maniacs of Orofino, Idaho are kind of odd. http://www.sd171.k12.id.us/ohs/index.htm The town of Orofino has an Idaho State Correctional Institution that was a mental hospital. They claim the high school mascot has nothing to do with the state mental hospital or the prison but I have a hard time believing that.
I've always like Penn's Quakers because the thought of Quakers fighting is oxymoronic yet amusing.

Ah ha! My friend went on a trip to Asia and came back with pictures from a seafood restaurant they ate at. All the food was swimming in tanks outside the place, and she took a picture of this disgusting looking thing. I now know it must be a Geoduck (or Geoduck's Asian counsin)!!!

I always loved the Tillamook (OR) Cheeseheads (some of my friends went there for high school) and the Annandale Atoms in northern Virginia. Those always cracked me up.
ETA: Elon USED to be the Fightin' Christians, which a lot of people took as an oxymoron. Now we're the Phoenix.

The MASCOT is Rocky the Bulldog.
The team's nicknames are the Leathernecks and the Westerwinds. The dance team used to be the "Wranglers" (yes, they did used to wear cowboy hats and boots) but then they got taken over by faculty that actually gave a $hit, kicked off the bad apples, and are now the "Westernettes". The colorguard are the Westernaires.
