MMMMMM- That sounds delicious, Honeychile! I think I'll call you the next time I have a question in the kitchen. Oh- I do have a quick one- when you cook in a casserole dish (like your party potatoes, for instance), do you usually put the lid on before you put it in the oven? The recipes hardly ever say & I never know what to to- can you please clear up this mystery to me?

To answer your question: In a regular oven, you cook without the lid (unless the recipe tells you to do so), but in a microwave, you usually cook with the lid.

I was just told this morning to make my broccoli casserole, too. What I love about casseroles is that you can make them the night before, then just bake the day of "the event"!

I'll post the broccoli recipe, if y'all want it. Another recipe I found (but am not going to try!) is a casserole of mashed potatoes & mashed yams, swirled together for a marbled effect. I just think the tastes would be confusing!

My aunt gave me this recipe; I use low fat mayo & soup, but real cheese!

Broccoli Casserole

Ingredients
1 cup chopped onions (1 medium onion)
2 boxes chopped frozen broccoli
1 cup mayonnaise
1 cup finely grated sharp cheese
2 eggs
1 can mushroom soup
crumbs for topping


-Preheat oven to 400º, serves 8

-Cook broccoli & strain thoroughly.
-(this works best in a blender, but you can use a mixer) Combine onions, mayo, eggs, and mushroom soup. Blend/beat until smooth, then add the cheese. Blend well.
-Mix the broccoli & the cheese blend together in a baking dish.
-Sprinkle crumbs on top.
-Bake for 30 minutes.

-If you make this ahead of time & refrigerate it, cook for 1 hour. Doubles easily.

Smile Passion

I think that I am most thankful for passion in my life. My family, God, sisters, friends...I am thankful for all of these. But passion gets me through the hardest days of school and life away at college. The ambition that I have for my life when all my friends that graduated with me are quiiting and marrying or just quitting gets me through. For this, I am thankful that God gave me such high hopes and to know that little things will not end my world.
