OK, here you go:

The first thing you're talking about is tzatziki, which is a cucumber-yogurt sauce.

The second thing you're talking about is melizanosalata (or baba ganoush in Lebanese). That is eggplant, olive oil, lemon juice, and garlic.

The last thing you're talking about is taramosalata, which is fish roe spread with garlic.
