Going through recruitment is a personal choice. Encourage your friend to visit the department of Greek Life and visit the websites of the sororities on her campus to learn more. It's not for everyone, and older students generally feel that they are in a "different" place in their lives than the typical 18-20 year old, or have established the relationships they want in college.
If she is interested in Greek life, encourage her and support her.
