I would say, mention getting together before the party, just something casual like "yeah we should totally go see that new movie next week" or something really low key that you can slip into conversation.
Don't actually ask her out until a couple days after the party, that way you can kind of feel out whether she was just looking for a party hookup or if she might really like you.
P.S. Isn't it random how many weird situations being Greek can put you in?? I had the same thing happen to me when I was philanthropy chair....totally thought this guy was dating me just so we'd do their philanthropy. Turned out he thought the same thing about me!! It was just that it was what we had in common and what our conversations first revolved around.
