as i learned from my archaeology courses in college, noses, arms ears and other unstructurally sound parts of statues fall off or are eroded naturally from the wind and time. in addition, the sand blowing around in the desert also helps to erode statues such as the sphynx. countless statues from even after the egyptian period are missing noses and limbs. the roman statues also are missing those important pieces.
