This is really thoughtful of you. I've had several internships and none of them gave me a gift at the end, so it's definitely a gesture above and beyond what's expected.
I second Phoenix's suggestion of a padfolio. Or maybe some nice note cards for writing thank you notes (monogrammed maybe?) those always come in handy.
