Neither. I'll go with crisp. Cookies should not be hard or soft (blech to both), they should be crispy.

Gingersnap should be hard.
Pfeffernusse should be soft.
Chocolate chip should be soft.
Oatmeal should be hard.

I like room temperature hard Oreos. I guess the only time Oreos should be soft and warm is when they have been in the oven or are fried at the state fair. SWTXBelle is correct that it depends on the cookie. Molasses cookies--the middle between hard and soft. Gingerbread cookies--hard but I'm open to allowing a soft one to tickle my taste buds.

Not the oatmeal cookies I grew up on and make now. They're fairly thin and crisp. They're the best, as far as I'm concerned.

No, crisp would be between hard and soft. When I think of hard cookies, I think of things like overcooked, dry or just plain bad homemade cookies or of many store-bought cookies like original Chips Ahoy. Chips Ahoy could double as hockey pucks.
I would classify as crispy a good shortbread, my aforementioned oatmeal cookies, tea cakes (hey, it's Christmastime, and they're the traditional Christmas cookies of my childhood) or a good gingerbread cookie. I would also include Oreos or Vienna Fingers.

Shortbread is neither hard nor soft. If it is perfect, it exists in a state of tension between the two - bottom is firmer, but top is buttery soft. It should literally melt in your mouth.
Now I need cookies and the house is currently cookie-free.

Exactly! And that state of tension between the two is what I'm calling crisp. They're hard enough that there's a snap when you break them, but soft enough that there's no crunch when you chew them. If you have a better word than "crisp," I'm open to suggestions.

You have clearly never had a good one which is why you are confused over this whole cookies thing. I have put your vote under Team Hard. Team Soft is still winning.

RIFL, my good doctor. I didn't say I hate them. I said they are unappealing, which is quite a different thing. I do not hate them, but neither do I find them irresistible like some people do. It is very easy for me to pass them up, because I do not find them be worth the effort involved in chewing. I do not hate them; I simply don't want them.

You fail to grasp that you have an underlying problem that is undermining the credibility and reliability of your data: assuming that there are only two categories, hard and soft, and trying to force all cookies to fit those two categories. To me, crisp = crunch. There is no "crunch" in what Belle described. When talking about a good shortbread cookie, I would call it firm, or perhaps dense. But crisp or hard.... no. They might be cohesive enough so that there is that snap when you break it in half, but the texture is not crispy nor crunchy.

I'll grant that crisp may not be the best word for cookies that aren't hard or soft. As I said earlier, I'm open to alternatives. Like you said with shortbread, it's not hard, but it's not soft either or it wouldn't snap.
I can think of lots of crisp things that aren't crunchy though.
But store-bought shortbread? Pale imitations.
