As someone who is a Greek advisor and went through these same interviews that you're talking about, here is what I've been asked by students:
Why type of experience do you have with Order of Omega, or GAMMA?
What are your views on parties?
What is your philosophy for higher education and Greek life?
What is your experience advising Greek students?
What type of advisor would you be?
Give them examples of situations and see how they react?
Do you have experience with Bid matching?
What ideas do you have for PR and recruitment?
Those are just a few examples. Ask your Greek advisor for suggested questions, they should give you a handout of questions you can ask and an evaluation sheet for each candidate.
