I have two friends that are readily accessible to ask for a recommendation letter.

One is a graduate of the law school I am currently waitlisted at and the other is employed at a “Big Law” firm in the same market as the school I’m currently waitlisted at. So which one should I ask?

Also, what exactly should the continued interest letter include? I figured just short and to the point.

I would go with the alumnus/alumna of the law school where you're waitlisted. Recs from alumni, especially good ones (i.e. not cookie-cutter ones) carry a lot more weight generally than recs from non-alumni.
