And I think if I knew you in real life, I would talk pretty freely with you. But I don't like feeling like I might be putting people on the spot.
If I had a more racially balanced group of co-workers and friends, I don't think it would be a big a deal. But if a group is already in the minority, I don't want to put individuals in the spokesman/woman for the race kind of role.
(although I think it would be pretty funny to be the spokeswoman for white suburban Americans. I'd like to be called on to explain jello salad with marshmallows to someone from a different culture)

Okay first of all, my mom HATED jello salad with marshmmallows so i NEVER had it growing up. I am so deprived.
Secondly, I'm glad to hear that people are aware of such things as I bolded -- I never assumed that people who were not minorities ever thought about it like that.

I will totally make you Jello salad with all kinds of stuff in it.
The thing you've bolded; important step for people who are involved in multicultural/ethnic/economic etc. situations. Just because one person who identifies with a group says or does something, doesn't mean all people who are also self identifying feel, act, or think the same way. I've seen some well intentioned, yet unsavvy people make some situations pretty awkward by saying something that may be fine with certain people, and not others.

Well, I wasn't always aware of it, but I think that if you teach, you think a lot about your obligation to your students and then you generalize.
