This one actually happened to me recently...
Food poisoning! (hint: don't ever, ever eat crab fettucini alfredo that has been in the fridge longer than 2 days)
Anyway, the thing that's great about it is that the sickness only lasts for a day, and most folks feel fine the next day -- so you could be sick and then perfectly fine the day after the interview, and no one would think anything of it.
