Shrimp Soup.

2 tbls flour
2 tbls butter
1 cup milk

add cream of mushroom or cream of celery

boil shrimp and cut into small peices

add onion, salt, and pepper to taste.

simmer and serve.

Portions depend on the amount of people to serve.

This is a baked potato soup recipe I make a lot-- I make it in big batches and then freeze it.

INGREDIENTS
12 slices bacon
2/3 cup margarine
2/3 cup all-purpose flour
7 cups milk
6 large baked potatoes, peeled and cubed
4 green onions, chopped
1 1/4 cups shredded Cheddar cheese
1 cup sour cream
1 tsp salt
1 tsp ground black pepper


DIRECTIONS
Place bacon in a large, deep skillet. Cook over medium heat until browned. Drain, crumble, and set aside.
In a stock pot or Dutch oven, melt the margarine over medium heat. Whisk in flour until smooth. Gradually stir in milk, whisking constantly until thickened. Stir in potatoes and onions. Bring to a boil, stirring frequently.
Reduce heat, and simmer 10 minutes. Mix in bacon, cheese, sour cream, salt, and pepper. Continue cooking, stirring frequently, until cheese is melted.

This sounds insane, but open your freezer door and stick your face in for a few seconds. The tears go away quickly. (I saw Bobby Flay do this on Food Network once and I tried it and it worked!)

Beef and Bean Burritos


1 pound ground sirloin
1 1/2 tablespoons chili powder
1 teaspoon cumin
1 teaspoon garlic powder
1 cup salsa (fresh or from a jar)
1 (15 ounce) can black beans, drained and rinsed
1 cup cooked rice
1 tablespoon fresh cilantro, finely chopped
Flour tortillas (10-inch)

Toppings:
sour cream
chopped tomatoes
shredded lettuce
shredded colby-jack cheese

In a large skillet over medium-high heat, cook ground sirloin until no longer pink. Drain if necessary. Add chili powder, cumin, garlic powder, salsa, rice, cilantro and black beans; cook over medium heat until heated through.

Spoon meat mixture in the middle of flour tortilla. Top with toppings. Fold and roll tortilla burrito-style. Serves 6 to 8.
