I agree with the poker night. We hold alumni casino nights and those are always a big hit. Not only do they bring the alumni out, but it also doubles as a fundraising event as brothers donate their winnings to the chapter.
What's also popular is wings nights. Just go out to any local bar and order million of 'em! Besides that, athletic events are fun, as of course the mixers.
