Broccoli Casserole
(This is a must from me on Thanksgiving!)
2 packages frozen broccoli, cooked & drained
1 can mushroom soup
2 eggs
4 ounces finely shredded cheddar cheese
1/2 C. mayonnaise
1 medium onion, chopped
1/2 C. cracker or bread crumbs
butter or margerine
Set oven at 350 degrees & grease a 9"X13" baking dish.
Into a blender (or food processor), mix the soup, eggs, mayo, and onion until smooth. Add the cheese, blend until smooth. Note: if you add the cheese too soon, it will goop up everything!
Put cooked broccoli into the baking dish, then pour the liquids over it. Fold until mixed. Top with the crumbs, and dot with butter.
Bake for 30 minutes.
