NPC/IFC chapters hold their meetings on Wednesday nights here. I've seen them start anywhere from 6 PM (or right after dinner) to 8 or 9 PM. I guess it just depends on the chapter.
We schedule our meetings for Tuesdays at 7, so that girls who are in social sororities can also join our organization. That's how pretty much everything runs at Tech -- you won't find many student organizations that meet on Wednesday nights (unless it's executive boards or something like that) to accomodate the Greek community.
