Are you asking prior to selecting a university or once a student have selected college XYZ and their is an orientation/parents day about the university.
Locally we have a college fair in a convention center where there was no greek rep. and I like the AZ idea with the local panhellenic being their. many High Schools, as the one I work in, also hold college fairs.
I do know my university had a students/parent orientation weekend (they had many over a summer to chose from) where students registered, picked a dorm room, got tours, etc... and maybe having the local CPC and IFC present and ask questions would be great so the parents & students know about greek life before signing them up.
