Chi Epsilon's is: Cherish Everything
At International Convention - there is a candlelight ceremony were each chapter (closed and active ones) shares it's sub-motto. It's a very beautiful ceremony and I was very blessed to be able to participate in 2001.
Speaking of which - start saving your pennies! Convention 2003 will be in Norfolk. I can't wait!
