Have you thought of a cruise? Most of them are pretty all-inclusive so you don't have to buy all your meals separately. You do, however, have to pay for excursions, alcohol, tips, etc.
But you can get a 7-day cruise that "pampers" your fiance, and it'll be TONS of fun.
I'd suggest a Royal Caribbean if you can afford it. Carnival is fun, but not high on the luxury factor.
