Does it have to be non-alcoholic? I mean, is there a point behind it? Most of the times when things are non-alcoholic it's because ritual is involved or you have work to do.
(and everyone, this is NOT an NPC sorority, so don't get your panties in a bunch about the alcohol factor)
Also, if at all possible, it sounds like it would be better to do this sort of thing midway through the summer, rather than right before everyone is coming back to school. I guess I don't understand the point of a retreat when you're all going to see each other in a week anyway.
