I'm not sure about any other types of sororities/fraternities, so I guess I can only speak about the two that I know of.
There are basically four types of GLOs: social (aka "general"), professional, service, and honorary.
Professional:
Some greek lettered organizations were founded around a basic interest... like business for example. Delta Sigma Pi (co-ed business professional fraternity) was basically intended for men and women majoring in business in college, so interact, network, bond with each other.

I guess other "interest" (since I can't think of a better word) GLOs have similar backgrounds.
Some "interest" or professional GLOs have certain requirements. Like Delta Sigma Pi for example - you have to be a business major. I think there are some music fraternities and sorority that in order to become a member you have to be a music major, or maybe just have an interest in music.
Social/General:
Social/General sororities have no requirements as far as your major in college or if you're interested in business or music or art or math or whatever.
These ones usually have a council on the school which acts as a governing body to all the sororities on the campus.
They mainly focus on meeting new people, building bonds with each other, having social events, and doing philanthropy work.
If this is the type of sorority you are interested in, try to find contact information for the Office of Greek Life (or Student Activities on some campuses) and ask about when recruitment starts on your school.
Service:
Obviously involves a group of people who focus on community service in addition to building bonds with one another.
Honorary:
Usually honorary GLOs "honor" students that have high GPAs. I think those you have to be asked to join (although I wouldn't know... b/c I'm not in one! lol) and you obviously have to meet requirements in order to become a member. These can be found in different schools (i.e. The College of Business, Arts & Sciences) and I am not sure, but I *think* Order of Omega might fall into this category even know it's not a fraternity/sorority per se.

One thing to remember is that you don't have to limit yourself to one type of GLO.
Me for example, I'm in a professional and social one.
One thing you usually cannot do, it initate into two types of the same organization. Like since I'm already in a co-ed business fraternity, I cannot become a member of another one. Also NPC sororities have a rule that says once you initiate into one, you cannot initate into another from the NPC.... but that doesn't stop you from joining a service GLO or honorary GLO. (I don't think honorary GLOs have any limits, but I could be wrong b/c like I said, I'm not in one
