Are you part of a national or NPC organization? If so, the appropriate regional or national officer would be a good place to start...

I was under the impression that most of our respective insurance carriers are *requiring* there to be a national member education program.
Sama, if your organization truly doesn't have anything, you'd best start looking at what other groups, maybe specifically NIC or NPHC are doing, plagiarize the heck out of 'em and move along.
If you're not paying for liability insurance, you might seriously want to reconsider your membership. I'm not kidding.

How to safely change a tire, check the oil and other fluids, change fuses.
No, I'm not kidding, many people, both men and women, have no idea about the specifics of their own vehicle.

Perhaps you can include team/brotherhood building activities. Larger universities have ropes or obstacle courses that your pledge class can reserve. Also, there are companies that offer team building exercises as part of their services. I know there's a company that often works with Disney in that respect.
Good luck to you and your pledges.

Here some ideas I came up with our New Member Education Process:
-Brother or Sister Skit
With this have your new members put on a skit about and active member either showing the good qualities of that member or just making fun of that member. This will relieve tension that you get during the process and will help the new member get to know the active member
-Have the New Member Manage and run a Fundraising event
With this you give the Associate Member or New Members full control of coming up with an idea of a fundraising or social event and plan everything and assign the active members to the responsibilities. This can help the new members with how to run things in your organization and can benefit when they get a spot of E-board
- Guess what Brother or Sister
With this you can have all members active and new members hanging out and you have the new member educator with a list of funny or serious things about active brothers or sisters heres a couple examples. Guess what brother only drinks pepsi other than coke? or Guess what sister just got engaged?
There are some ideas that my Fraternity and I came up with to try to get the Associate Members more active during the process hope these help out and hope they start up some ideas for you to think about.

Another recommendation is add education bits in small pieces. For example, during each meeting report on an interesting topic like those above- it could be 5 tips for resume writing, or 10 moments in your Fraternity's history. That way you don't have to have a lot of extra educational programs that people may or may not show up to. A blend of longer programs with short reports during the meeting is good, I think.
You could also work to get other officers involved. For example, the Ritualist could give some ritual tidbits or practice a song, as long as no new members/guests are present. Or perhaps if you don't have a specific Education chairman, the "tidbit role" could alternate between officers each week so that you get a different educational flair from each.
