I would speculate that the reason the Grimes' claim wasn't just paid by Saban (even if for no other reason than to keep it out of the news) is that this might imply guilt on part of his daughter.
It appears that the Grimes girl was going after a lot more than just her medical deductibles (Grime's Complaint at end of this article):

Looks like Saban followed later with a Motion for Summary Judgment, which was granted by the Alabama Circuit Court though denied on appeal to the AL Supreme Court.
Looks like a nasty she said/she said ahead.

"Wherefore" clauses at the end of complaints ask for damages based on which division of a court the lawyer prefers to be in. Ie. In Illinois, we plead a damages request on the basis of whether we want to be in small claims court vs. magistrate court vs. law court. It doesn't have much to do with what the case will settle for, eventually. It also doesn't always have much to do with what we originally asked for. There are plenty of times when we're willing to settle cheap before we have to file suit, but once we have to file suit, we're asking for as much as we can get.
