You know, I was dead set against this tradition as I am not a fan of eating anything past 72 hours old. But my husband wanted to do it, so the top layer is in my freezer. We shall see next April!
Tip-I heard of someone defrosting the top layer, chunking it up and making it into ice cream. Of course you need an ice cream maker but it sounded like a really neat way to enjoy it. They had a red velvet wedding cake but I think any type could do. Cake and ice cream is a killer combination!
