I have nick names for all my step mothers..

My mom is of course "biological mom"
2nd "the ugly mom", but she was nicest when I was young
3rd, "the scary mom", she used to spank me
4th, "the devil", enough said
5th, present, I just call her "baby mom" in Korean, mang neh

Of course I say all this in Korean...so the translation is a little weird in English.

I pretty much can figure out my uncle's new fiance as my step-aunt, and her daughter as my step-cousin.

Your uncle's ex-wife is just that, "uncle's ex-wife". You can call her your ex-aunt but I think the first is clearer. Your uncle's new fiance will be your aunt, not your step-aunt. Her daughter will be your cousin if your uncle adopts her and simply your aunt's daughter or your uncle's step daughter if he does not adopt her.
