She mad/He mad...signs that give them away when they say they're not

Hey y'all. When your significant other is mad at you or at something you did that pissed them off, and tells you they're not mad, what gives them away every time? With my girl, I can tell when she's mad at me about something by looking at her lips. She presses those things together tight as hell LOL. She'll be mad at something, but when I say what are you mad at she'll say I'm not mad, knowing she is.

My ex would just be really quiet. Like, we'd be having a super long conversations and he would just give short responses. When asked, he'd always say "I'm thinking." Then, the bucket of worms opens.
