Risk management means different things to different people. I would start by contacting your advisers to see if there is any AST-specific workshop or series conducted through your nationals.
Here are some ways my chapter and chapters I have advised have discussed these issues:
During retreats, we break into small groups and everyone is assigned a scenario. They then act it out for the whole chapter, and the chapter discusses the scenario through a moderated discussion. For example, "no drinking in letters," "what is hazing, how to recognize it, and why is it wrong," "communicate through the chain of command," "no talking to the media," "no posting crazy photos on the internet," "ritual is private," etc.
We have also put on workshops with our GAMMA chapter to discuss responsible alcohol management. These are great workshops to co-host with other Greeks and they can be fun and interactive, in addition to being educational.
We also invited speakers to discuss self-defense and perform interactive demonstrations. I think this is a great workshop for women and can double as a COB activity. In addition to knowing some key moves, students learn things like walking with a buddy when it is dark, not leaving your friend at a party, etc.
During officer transition, we also discuss risk management and responsible choices. There was a risk management committee of officers at every social event at my chapter.
