Going off of events that the sororities do on my campus:
us ASTs put on a Mr. and Miss PSB Pageant
ASA has a date auction
Theta Phis have "Pie a Theta Phi" where they simply charge a dollar for anyone wanting to put a pie in their face (the pies are just whipped cream so they actually make money)
Another thing that I heard one chapter did (I can't remember where this was)... they kind of did little street performances all around campus. One person played the guitar... a couple others mimed... a few more played "drums" on buckets... a couple more put on little skits... or told jokes... or danced... or put on little guessing games where people would donate a dollar to play, but if they won, they'd get two dollars back (things like having the GLO member guess their age, or guess within 4 letters of the first letter of the person's name, etc.)... they did numerous things. They left buckets in front of each of them with a sign asking people to donate money for their philanthropy. It sounds really cute and fun, and I guess they made a lot of money off of it (because it was absolutely no cost to them!)
In addition to large events, try to look for simple donations throughout the school year. If you can, have people collect money during large events like Greek week or Homecoming.
Another thing that my chapter does is that at every meeting we pass around a piggy bank (and yes, it is actually a big that we've decorated!) and the sisters put any loose change that they have into the pig. Once the last 6 weeks of the semester hits (either early November or mid-March) the girls discuss what they would like to use that money for. Sometimes they donate it to the national philanthropy, or they might use it for something like Toys for Tots at Christmas.
