Question Vegetarians?

Can't you guys tell when I don't have a freaking thing to do at work -- I am either totally swamped, or totally bored (and you can tell by the posts...) Anyway ---

I have been a vegetarian for 8 years (yes I love animals, and no I don't push my beliefs on other people when it comes to food -- actually I always end up with people holding a steak up and going "Moooo" at me -- like I care - I just don't choose to eat it)...sorry, I digress --

So - I do eat eggs and dairy (lacto-ovo as we call it) but no fish, chicken, etc... What I need to know is does anyone have any good vegetarian recipes? I don't eat Asian food or anything Spicy due to medical reasons, but I would love to expand my diet outside my normal mac&cheese and any variation of pizza (especially if it says "Papa Johns" on the box).

I really am not looking to debate anyone on any aspect of the "superior" human race or "aren't eggs baby chickens?" or anything else - I just choose to be me....I'm just a hungry me....hahaha ! Thanks!

Here are some of my favorite veggie cookbooks and anything Asian can be toned down considerably. Check used books stores and websites (like half.com) for used copies, as a couple of these books can get a little pricey).

Anything my Molly Katzen (start with her Moosewood books or her latest, Vegetable Heaven).

Deborah Madison's Vegetarian cooking for everyone or the Greens restaurant book.

Either of Linda McCartney's books.

Any of the Vegetarian Times magazine's books (and subscribe to the mag, it's great)

New Vegetarian Cuisine by Linda Rosensweig

The Essential Vegetarian Cookbook from Whitecap books.

Also, don't forget that so many soy substitute products are available and you can adjust standard 'meat' recipes to take advantage of veggie crumbles, sausage or 'chix'. Also, any marinated chicken, turkey or pork recipe works well with firm tofu.

Great suggestions - I'll start trying some of those. I guess it would help if I could cook (I can cook some things, its just all basic stuff). Actually, I cook meat for my husband and family -- they tell me I make the best chili -- isn't that funny? I can make it, but not eat it - guess I'll have to take their words for it!

I'll give it a try on the suggestions and let you guys know how it turns out! I have used allrecipes before and LOVE IT because it allows you to scale the recipe down or up for however many people you are serving. I did their squash casserole for Thanksgiving - YUMMY!

I think it would help if I weren't so picky -- for instance, I do not touch broccoli (the work of the devil if you ask me), cauliflower, celery, onions (except the ones you cook for stuff), any kind of peppers including bell, cantaloupe, any melon except watermelon, beets, asparagus (actually never tried it -- guess I should), and usually not bananas (but I force myself when I get those awful leg cramps). I really wish I did eat broccoli - but I just can't stomach it. And why do they always serve vegetarians "California Blend" at conventions when everyone else is eating prime rib or grilled chicken?! Can we please get some pasta or something in here? Can you tell I've been to my share of conventions, luncheons, etc?
