Good luck!  You'll be filling a market that's gone unfilled for way too long.
As I'm sure you know, there's a chapter of Sigma Kappa at MIT. I'm sure they'll be happy to give you some business.  But you also have to be good to the AEPhis because I suggested the idea.
(Actually, that's one pet peeve I had about the greek store that used to be in Boston - despite chapters at MIT and BU, they hardly ever had any AEPhi stuff in stock.  )

A Think Pink Think Zeta shirt
ZTA lipgloss that taste good (I have had some nasty tasting ones)
ZTA realated stuff for my scrapbook
and A Zeta new ZTA tote back w/ letters that has pink on it!
and I think that covers it!

that is so exciting about your new business! Make sure to keep us all updated. Maybe once you get started, you could have an online shop as well to sell your stuff!
BTW, there are two SAI chapters in Boston: one at The Boston Conservatory, and also a Boston Alumnae chapter. If you can, try to carry some SAI items...trust me, SAIs go nuts when we actually find merchandise for us! 
And if you stock anything for us, please let me know because if I don't already have it, I'll buy it!

Why is it that everything I want is only offered to NPHC orgs?
Does anyone know of any company that makes greek checks? I would really like to have my letters on my checks.

Checks Your Way should be able to do what you need. You can create a custom design. It's about $4 to set up and the first set of checks is about $25. BUT, after that, sets of 200 checks are about $9.

Back in the day, the Lambda's used to wear those old satin jackets (think 70's). I would LOVE to have one But they're so dag on expensive!
