My husband & I have a ridiculously large collection of books (fiction & non-fiction). I also collect Raggedy Ann dolls; my grandmother has been collecting them for years, and once I joined OPhiA, I started collecting them as well.
A couple of my dolls:

This isn't the same as a lot of your collections, but I always keep hotel keys of wherever I stay as souvenirs. I think it's a cool way to see all the places I've gone.

Books
Tarot Decks
Shot glasses from states/cities I've been to (crap, I forgot Pittsburgh!)
Paddles and other wooden fraternal items
Enemies
As a child, I used to collect crystals (will still purchase a nice one every now and then) and coins.

My parents had a rather large swizzle stick collection that is now mine. It makes me wish bars still did cool stuff like that.

^ LOL! My parents had one, too, but got rid of it when my daddy went "dry". I especially loved a cool set of flamingos they had.
I collect books (too much), crystal snowflakes, and used to collect bunnies. Once I realized that I had literally thousands of bunnies, I started re-homing them. I did keep the Royal Doulton ones, though.
I also used to collect Beatle albums. Not cds, because I was going for the cover art, which really doesn't translate well to cds. I literally owned every Beatle album made in the USA, and several other from around the world. But the best part is that, earlier this year, I found out that one of them is worth well over $15,000 - sounds like a good profit to me!

I collect neckties, I have way too many it's obscene. I also collect crazy socks. Basically, I'm a clotheshorse.

I collect shot glasses. My goal is to have one from every state. Whenever I fly, I pick up one from the aiport if it's a state I am visiting (or layover-ing) for the first time. I have about 16 I think.

I used to collect tshirts from places I'd been, but I gave a lot away recently.
Currently I collect:
-Tea/coffee mugs from places I've visited (as an avid tea/coffee drinker, you really can never have enough, especially since they break)
-Foreign money (again started when I began traveling, I figure I can always exchange it back if I need to)
-Tri Sigma badges (okay collecting is a bit of an overstatement as I have two, but this collection will hopefully grow soon)
-Mementos (This is my least useful but largest collection by far. Think every program/ticket stub from most every movie and play I've pretty much ever been to, old notes people have written me, special cards--I finally threw out every generic birthday card I've ever gotten-- little tokens from different places I've visited. It's seriously out of hand. Think a four foot by three foot by two foot drawer in my room-- that's 24 cubic feet of crap. I keep thinking that eventually I'll make a scrapbook out of it all, but it'd have to be several for all the stuff I have.)
-Boy's hearts-- I kid, I kid.

I would have thought cover art would translate well from LP to CD, given that both covers are square.

I wish I had an intentional collection! I have lots of crap!
I used to collect Happy Meal toys when I was younger. Umm, I have a weird thing about notebooks. I have at least 5 blank notebooks/notepads that i bought or given to me and have yet to be written in.
Used to collect those gel pens that were all the rage circa 2000-2002. Oh, and Pogs circa 1994.
This thread reminds me of one of the books we read to the kids: http://www.amazon.com/Puddle-Pail-Pi.../dp/0140565213

I collect oil cans (yes, like the Tin Man needs) and world globes. I don't have any super old globes but the ones from before WWII are pretty interesting to look at.
