Here is her recipe for her Crayfish and Andouille Gumbo:
GRITS
1. Bring stock to a boil with bay leaf.

4. Stir in collard chiffonade. Combine well and continue to stir until wilted.
5. Pour in wine and let reduce.
6. Pour in chicken stock. Then, stir in 2 T light brown roux. Adjust seasoning.
7. Throw in crayfish tails at last minute, so they don’t overcook.
8. Serve gumbo over grits.
COURT BOULLION
1. Put all ingredients in pot and bring to a boil.
2. Cook crayfish in small batches for about two minutes each.
3. Let cool. Twist tails off and save at least four bodies for garnishing each
serving.
4. Cut tails in half and pull meat out. Set aside until ready to use.

YAY, we know carla is safe... It looks like she will come in 2nd to Stefan, and her chances for final 3 increases... Jamie, Josea or Leah are going home... they made it seem like Josea had the poorest dish, but my guess is Leah due to over all performance...

Sorry, y'all, he may sometimes be an ass, but it looks to me like Stefan is truly the "Top Chef". Time will tell . . .
eta - I'm laughing at the McDonald's commercial - who thought a Top Chef audience would want to see a quarter pounder ad?

I CANNOT believe they kept Leah over Jamie!!!!!
And I agree, Stefan has this one in the bag, I think.

Sometimes the judge's choice amazes me.
GOOO CARLA!!! Just cause her experience is more "homeschooled" doesn't mean she can't be a top chef.

Meh DH and I have watched Top Chef since the beginning and to be quite honest, we quit watching after Restaurant Wars. We kept saying for weeks before that that we were going to boycott. Not liking this season. Mostly because its only really like 20 minutes of show and 40 of commercials. Every time I watched I had this overwhelming desire to go out and buy a ton of Gladware and Swanson broth.

WHO. IS. LEAH. SLEEPING WITH?????!!!!!!! (and I'm not talking about Hosea, that horse has been beaten into dust, so they can't be keeping her around for that)

Agree with all of you. Jamie knew what she had done wrong and fessed up that by the time she realized it, couldn't do anything else.
I missed the quickfire, but did Leah really give up?
Leah should have gone home. Jamie is a much better cook.

The only thing I can think is that letting Jamie go now makes it much easier to get down to the final 4 after next week -- they drop Leah and the final 4 is Carla, Hosea, Fabio and Stefan. Leah vs. Jamie for the final 4 would have been a tough call and Carla clearly did a better job on this past challenge, so they made the tough decision this week. The final 4 should be a hoot! (or hooty hoo )

I read Tom's blog. He said that 5 of the 6 dishes were actually very good. Jamie's was unedible. I think they had to do what they had to do.

So I rewatched the episode b/c I wanted to see the deal with Leah & Jaime's food, and I did NOT know that Carla is a trained chef. Very surprising, and i'm very glad she did well.
Although I think Leah should have gone home, I don't think Jaime is much better. Remember, for a lot of the challenges she cooked scallops...and she only did well b/c she knows how to prepare scallops well.
I think the judges know better, and really it did seem like they liked Leah's food better than Jaime's.

I really doubt Carla is going to take the competition... but I am wiling to put money down that she is at least top 2 for fan favorite...
