Okay, Hillsdale is pretty small, so I don't get all excited when I see other Greeks.... I know them all.  But, in my classes:
Methods (6 people): 1 Kappa
Shakespeare's Tragedies (12 people): 1 Kappa, maybe an SAI (they don't wear letters often, so I'm not sure which girls are actually in SAI)
American Novel (about 15 people): 1 Pi Phi, 1 Pi Phi who went alum, 2 Kappas, 1 SAI
SR (5 people): 1 Chi-O new member
Practicum: 1 Pi Phi, 1 Chi-O, 1 SAI, 1 Kappa (and I'm not sure what else.... That class only "meets" once a month)

-I've seen a Delta Tau Delta shirt on a guy and a KKG shirt on a girl, but we don't have chapters of either at my school, so I'm not sure if they are members or they just happen to have the shirts for some odd reason

In my health psych class, there are about 90 or so people in the class and off the top of my head I know there are at least 2 Kappa's, 3 Phi Mu's, 1 Phi Delt, a handful of AKL's, 2 or 3 DG's, some Zeta's, a KD, a Lambda Chi, and a couple of Chi O's. That's just the people I know of though, i am sure there are many more.
Stat is a huge lecture and I am sure at least 50% of the class is greek, if not more.
My women's studies class there is a Pi Phi, and then me and one of my sisters.
In my rural sociology class, I am the only greek. But it's also a night class with all adults so that's probably why.
