For my chapter, about a month would have been fine as well. As always, the sooner the better. Just keep in mind things like recruitment. Come to think of it, most of our informational/open presentations came after initiation because there was just more time.
Another thing to think about is having a presentation open to the campus, but having the presentation co-sponsored by a particular chapter. I know you are mainly trying to reach the Jewish community but you may find you are able to reach more faiths by including the campus community. Perhaps including an optional survey at the end of the presentation which asks for the religion. I mention this because I attended a presentation on breast cancer which was sponsored on campus by ZTA but its aim was to reach the African-American community. At the end, we were given optional surveys that asked age, race, sex and any opinions we had. Perhaps get Greek Council involved, too. Our Greek Council operated on a point system, where chapters had to have X number of representatives at an event to earn points to participate in Greek Week. So instead of just ZTA attending the event, members of NPC, NPHC, IFC and other just interested parties from campus attended. I'm sure the presenters were happy because they not only targeted their audience, but it can't hurt to give information to other parties as well.
