I like yellow rice.
If I prefer one type of rice over another, would that make me ricest?

i can tell i'm hungry.
they all sound good. i am a fan of fried rice, wild rice and minute rice, of course. mexican rice, sigh, really has to be well prepared.

Don't eat the Mexican Rice at Taco Bell...it's made with fryer grease, and I'm not even kidding...the recipe calls for 1 scoop of fryer grease per pan. That is about the most disgusting thing I can think of to do too...making Mexican Rice every Sat/Sun morning at 8 AM when I just got through washing the dishes from the night before at 3 AM (I don't think I had legal working condtions at Taco Bell, especially since I was 16 at the time).

Brown rice, lower glycemic index and it still has the hull on it so more bran content whereas white is enriched and has been hulled. - This is really only important to dieters I suppose
Otherwise I love Wild rice and after that Jasmine or the short grained type rice that is stickier.
BTW to answer the what is yellow rice question, yellow rice is just white rice that has safron (sp?) added to it to give it color and flavor. Also has a couple of other things in it... You find it a lot in the south, but from what I understand it has Latin origins.

There are greasy middle eastern restaurants that make it oily and buttery and that's just appealing to poor people. Then there are the really authentic places that make it and it's like an art. The rice is pristine. There is an amount of butter added in. A tiny portion of the rice has saffron to make it a beautiful color. The aroma is drawn out and you can smell something wonderful - great with aromas and tastes of mint and rose that are usually in other parts of the meal.

In additon, my understanding is the hull or the brown rice is high in fiber. Your stomach has to work harder to process the fiber in brown rice, so there for not as much is absorbed into your body. On the other hand, it is very easy for your body to break down white rice so the starch/sugar is absorbed quickly. The fiber also makes you feel full faster and the full feeling last longer.
