As a student at Catholic's law school, I'll chime in. First of all, the person suing CUA is the same guy who sued us over the same sex dorms. Second of all, I believe that there is an undergraduate Muslim student group, so I really don't know where those allegations came from.
For what it's worth, I'm Jewish and very happy at Catholic. While I do attend the required class that deals with Catholic philosophy and law, I never feel uncomfortable, and the only questions I get about being Jewish are out of innocent curiosity. There are crosses in the classrooms, but they are fairly unobtrusive, and there are many places to go if a Muslim wanted to pray. I discussed this with the two Muslims in our law school, and they're fine; they said the only reason there isn't a Muslim law society (while there is a Jewish one) is because there aren't enough Muslims to form them.
That said, it's called Catholic University. They receive funding from the Vatican. So don't be shocked if you see Catholic influence on campus, its not like they advertise themselves as the Nondenominational Univeristy of America. If you have problems with that, then apply to one of the other schools in the country. It's not exactly rocket science.
