Christmas Cookies!

Do you like Christmas Cookies?
Do you like to bake them?
Do you like to eat them?
What are your favorite kinds?

I love cookies, but they always taste best in this time of year!
I need to be in the mood to bake, but when I do, LOOK OUT!
Duh!
I love the little ladylocks, gingerbread cutouts, brownies, chocolate crinkle, snowballs, almost anything that's chocolate/peppermint, buckeyes, etc, etc, etc.

I’m not really a sweets person, but I do like molasses cookies. A couple of those, a nice hot cup of coffee, and a newspaper would be nice right about now.

I have cut way back on my usual baking and candy making since COVID but here's what I've been making every year:
Pistachio Coffee Cake
Lemon Bars
Sugar cookies- cut outs with frosting
Cherry Crinkle Surprises (these have maraschino cherries in the dough and hershey's cherry cordial kiss in the center!)
Oreo Truffles
Cooke Dough Truffles
Chocolate dipped pretzel rods
Hershey's Cocoa Fudge

I didn't get to the pizelles this year but I might do them tomorrow! I don't have much else to do at this point!

I love to cook and to bake. I am allergic to gluten, so baking so that I can also partake had been a challenge. I stumbled upon an America’s Test Kitchen gluten free cookbook that has the best gf flour blend recipe I have found. I was planning on baking cookie but a SIL sent us a ginormous box of assorted Cheryl’s cookies ( I swear there must have been 80-100 cookies in there)! They are not gluten free, but it saves me the calories. Then a neighbor brought over some spritz cookies she had made ( again not GF, but that’s okay….calories). Had we not had this cookie windfall I would’ve made a GF version of pecan crescents ( love me some powdered sugar), cherry crown cookies, and peppermint candy cane shaped cookies.

We love any of the traditional Christmas cookies from Aldi. Since it’s a German company, they have amazing ginger snaps and soft iced gingerbread cookies from Winternacht. Speaking of something good with a hot cup of coffee!

You get to pretend you're still eating healthy when partaking nuts that rest upon sugary cookies!

This will be my list again, although i'm going to see if I can do any keto.

I aIways make gingerbread cookies, but I'm going to try rum/bourbon baIIs this year I aIso make my speciaI recipe that I caII Tweaker, based on oatmeaI cookies

I love jam thumbprints made with good jam. (Bonne Maman, yum.)

My mother makes pecan butterballs, and I can't leave those alone.

My family loves anything with marzipan. Aldi sells good stollen with marzipan inside. It's so wonderful toasted on Christmas morning.

I absoIuteIy Iove jam thumbprints! We made them every year when I was a kid DH doesn't eat nuts, though, so I haven't made them in years

I have a great nut-free recipe for them. I'll find it and post it. I always like to buy unique and high quality jams at vendor shows or farmers markets to make them with.
