If this is a requirement for your organization, I'd think you get more answers from members of your organization.

When voted into an officer position, do you not work with the previous officer to discuss and transition your role?
Do you have access to holders of the position from other chapters? Do you have advisors? Perhaps contact any of these people via email?
Have you asked your members what they might like to do?

Again, what KINDS of things would satisfy your punishment requirement? Volunteering at a local charity? Coming up with things for your fraternity to do as a group? Need more info before we can help.

We are not members of your organization. I can spout out a million and one ideas, but if none of them satisfy the requirements set by your organization, it won't matter.
ASK YOUR OFFICERS.
ETA: If 3 people are telling you to do the exact same thing, maybe you should pay attention.
